Chocolate Mug Cake and Homemade Ice Cream
When our kids were younger and still living at home we would make homemade ice cream on our birthdays. It was quite a big deal, buying the milk, cream, ice, and salt. I do love homemade ice cream. All of our kids now have their own homes so making ice cream in that big canister seldom happens anymore.
I was thrift store shopping about a year ago and I found a countertop ice cream maker. It wasn’t expensive so I bought it. It seemed pretty easy to use, the entire bottom of the maker goes in the freezer and you take it out when you are ready to make ice cream. We’ve never used it even though I had stored the bottom of the maker in my freezer. This past weekend I decided I wanted homemade ice cream and remembering that I had this countertop maker I decided it was a great time to try it out.
The maker works like this; the bottom of the maker goes in the freezer (you already know that) and when you want to make ice cream you take it out and put it on the counter. Pour in your ingredients, put on the top with the motor, plug it in, and let it go. It takes longer for it to become ice cream but it so very convenient and not messy at all. It works very well!! Vanilla ice cream made!!
Steven and I each got a cup (I put maple syrup and walnuts in mine) and enjoyed our treat while watching a movie. The rest was put in a plastic container and put in the freezer to be enjoyed later.
I ate my lunch today and decided I really wanted some chocolate cake with some homemade ice cream on the top. So I made for myself a 3-minute chocolate mug cake, dipped out some of that homemade vanilla ice cream, put it on the top and watched that creamy goodness melt and seep into that chocolate wonder. I so enjoyed that treat!

Mug Cake Recipe

Lona’s Easy Ice Cream
- 3 cups whole milk
- 1 cup heavy cream
- 1 Can sweetened condensed milk
- Vanilla flavoring
*By the way, if you don’t have an ice cream maker you can make ice cream in zippered bags too.*
Put 1 cup of the mixture in a quart size plastic zipper bag. I suggest you duct tape the opening too. Put that bag in a gallon sized zippered bag, along with 2 cups of ice, and 3 tlbs of table salt. Seal it and flip the bag over and over until it becomes ice cream.
